31 Days of Simple Blessings: Day 6- Simple Broccoli Cheese Soup Recipe

One of my favorite things about the Winter months are the yummy comfort foods I enjoy making for my family. In lieu of the super cold weather we're having lately, I decided to share a delicious Broccoli Cheese Soup Recipe.

There's nothing like a hot, creamy bowl of soup to warm you up. Enjoy!


SIMPLE BROCCOLI CHEESE SOUP RECIPE
INGREDIENTS:
4 cups chicken broth (one 32 oz box)
1/2 cup water
8 slices processed   American cheese (like Kraft)
1/2 cup flour
1/2 teaspoon dried onion flakes or 1 tbsp diced onions (my preference)
1/2 teaspoon black pepper
4 1/2 cups broccoli florets, cut to bite size pieces
GARNISH WITH- 1 cup shredded cheddar cheese  & 3 -4 teaspoons minced fresh parsley

1.  Combine Chicken broth, water, half and half, cheese, flour, onion and pepper in a large soup pot.
2.  Bring to a boil, stirring constantly, reduce to a simmer.
3.  Add broccoli and simmer for 15 minutes more or until broccoli is tender but not mushy.
4.  Top each bowl with a handful of cheddar cheese & a pinch of parsley.
