Delish Dishes: Raisin-Bran Pineapple Muffins Recipe


My beautiful grandmother has always made the very best muffins! As kids, we always looked forward to visiting her in Abilene, Texas and loved waking up to the smell of her oh-so delish Raisin Bran Muffins!!

When I became a mom, I asked her for the recipe so that I can treat my kiddos to the same muffins that I grew up loving!!

Be warned-these muffins are absolutely addicting!!!


Ingredients:
1 15-oz box of Raisin Bran Cereal
4 cups of sugar
5 cups of flour
2 tsp salt
2 tsp baking soda
4 eggs beaten
1 cup salad oil
1/2 quart buttermilk
1 large 20 oz can of Crushed Pineapples

1) Pre-heat oven to 400 degrees.

2) Mix together cereal, sugar, flour, baking soda and salt.  Add beaten eggs, oil, buttermilk & pineapple. Mix well.

3) Fill muffin cups 2/3 full and bake for 15-20 minutes.

4) Enjoy!!!
*Store unused Muffin batter in a covered bowl in the refrigerator for up to 4 weeks.

These muffins are great when topped with butter or cream cheese and served with hot tea or coffee!! Sometimes I also add extra raisins-the golden ones are delish!!

DIY Decor: My Fun Fall Pennant Banner

Ta-da....my new Fall Banner!!
I was tempted to title this blog, "How Not to Make a Fall Banner" due to all of the issues I had while trying to put this adorable banner together. But in the end, I'm super happy with the way that it turned out-plus it's always fun to exercise my problem-solving muscles every now and then!!

Now that Fall is finally upon us, I've been doing some serious nesting & the best part of all is that I haven't spent a dime with this year's decor, because I'm using what I have and making the most of my oh so awesome sewing machine that my even more awesome & amazing hubby bought for me a couple of years ago.
My Fall Owl Pillow Covers

If you've been following, you're probably tired of seeing my Fall Owl pillow covers, but so far they were the only touch of Fall in our sunroom, so I desperately wanted to add something else. That's where the pennant banner came into play!

I found this super informative & easy-to-follow tutorial over at Your Home-Based Mom. Her pennants are absolutely perfect and beautiful! She's definitely one of my new fave blogs-lots of great ideas and projects that I'll be trying soon. I highly recommend checking out her blog for a play-by-play....you won't be sorry!
Love how the banner ties in with the pillows and vice versa

One of the best things about this project is that you likely have all or most of the materials needed on-hand. All you need is Scraps of fabric (for the pennants), sewing machine, bias or twill tape and stitch-witchery! (The tutorial doesn't call for Stitch Witchery, but I had to improvise due to lack of patience!)

This project took me 2-3 hours, which is a lot longer than I'd planned-because I had issues with my machine and my little one refused to take a nap.

I'm looking forward to attempting another pennant banner soon-how cute is her Halloween banner?! And how cute would one of these be in a kids room? The possibilities are endless!!

Fall Nesting Around Our House

Fall, glorious fall! There's just something about the changing of seasons that makes me oh so happy! Fall is especially amazing since you transition from the blistering heat of summer into nice, crisp Autumny weather! Love it!!


I started Fall Nesting last week by pulling out some of my decor, crafting up some new pillows and of course changing our scent from summery Lemon Cilantro to Warm Vanilla and Mandarin Cranberry!!

Took our table from blah to just right for Fall by using a Pier One table runner, assorted candles, Dollar store leaf garland & ceramic pumpkins from Hobby Lobby & Kirkland's.

Another view of our Fall tablescape! I'm loving it-simple, but perfect for this time of year!!

Miscellaneous touches of fall in our dining room-love the pumpkin-it lights up!

One of my fave things about this time of the year-hot drinks! Tea, chai lattes, hot apple cider-yummy!

I change out the scents in our candle warmer to match the seasons-for fall we've got Mandarin Cranberry, Warmed Vanilla and Sugar Cookie!!

And of course I couldn't wait to put my Fall Wreath on our front door!
Nothing says Fall-like a wreath!!

DIY Decor: Easy Owl Pillow Covers

Whooo loves decorating for Fall?

I know I'm so cheesy...but I couldn't help myself! I absolutely love Fall Decor and lately I've been coveting all of the cutesy Owl goodies!! I've seen adorable placemats, pillows, door hangers, towels and more!

Of course, me being cheap-I knew that I could create something simple & special without spending a dime!

Started with these summery pillows that I purchased from Kohl's back in June.
And voila-by making easy pillow cases for the pillows using leftover fabric & using additional scraps to make my easy Owls.

Owl #1 is ready for his closeup!

Owl # 2 is ready for hers too!!

See what a difference some new pillows make!?

Next time I'll actually take my time and take some pics while I'm working. But I was in such a hurry to get this done while my little one was napping-so I forgot.


The best thing about creating your own pillow covers is that you can save a ton of money & space by just switching them up to match whatever season or decor you'd like.

Great Goodwill Finds: Leather Chair Set

It was another super weekend at our local Goodwill stores! Since it was Super Saturday-which is the first Saturday of every month, everything was was 50% off at all of our local Goodwill stores. One of my girlfriends and I headed from store to store in search of awesome finds.  Here's a quick recap of what I found!

Seriously-a practically new leather chair for $30 (it was priced at $59.99 but was 50% off)!!

The matching ottoman was $10 (priced at $19.99 but 50% off)!

I immediately thought of my husband when I saw this chair-ottoman set because he's been wanting to have a sitting area-space of his own in a corner of our Master Bedroom. Here's his perfect little space!
I purchased a brand new Circo Blast Off 4-piece toddler bedding set for $7.50
(was priced at $14.99 plus 50% off)
Found a hard-to-find Pottery Barn A to Z crib bumper in excellent used condition for $2.50
(was priced at $4.99 plus 50% off)
Purchased a book by one of my son's fave authors for $.034 (priced $.69 plus 50% off)
Purchased a brand new copy of Martha's book-which is perfect since I'm in the process of starting my own Professional Organizing & Decorating business! The book retails for $25-I paid just $1 at Goodwill!!

I've wanted a lazy susan to organize my spice cabinet and found a brand new stainless steel one for $2 (priced at $3.99 plus 50% off)

In addition to these great finds, I also bought four practically or brand new shirts for my boys for just $4!!!

Best of all, I spent around $60 total!! Had I paid retail-these items would've easily totaled around $500! Gotta love Goodwill!!

DELISH DISHES: Glazed Chicken Recipe

Our family eats a lot of chicken and after a while, I feel like our menu gets a bit boring. I'm always on the hunt for new recipes to try and came across this delicious Glazed Chicken Recipe from Lea & Perrins.

It was so easy to make-and you'll likely have all of the ingredients on hand so no trips to the grocery store!!

Classic Glazed Chicken

Classic Glazed Chicken
This is a classic chicken dish with a sweet marinade that grills to perfection. Goes well with your favorite grilled fish too.

Prep Time: 5 minutes
Cook Time: 12 minutes

Ingredients

  • 1/4 cup Lea & Perrins® The Original Worcestershire Sauce
  • 1/4 cup lemon juice
  • 3 tablespoons brown sugar
  • 2 teaspoons Dijon mustard
  • 1/4 teaspoon ground black pepper
  • 4 boneless, skinless chicken breast halves

Directions

  1. In a medium bowl, mix together Worcestershire Sauce, lemon juice, sugar, mustard and pepper. Place chicken in marinade and turn until well-coated. Cover and marinate in refrigerator for one hour, or overnight if desired, turning occasionally.
  2. Remove chicken from refrigerator, reserving marinade. Grill chicken over medium heat for 4 to 6 minutes on each side, or until cooked through, basting frequently for first 5 minutes. Discard any remaining marinade.
Here's a tip: For stovetop method, use large skillet sprayed with nonstick spray over medium-high heat. Cook chicken for 4 to 6 minutes on each side, or until cooked through, basting frequently for first 5 minutes. Discard any remaining marinade.
